Today we spent a good part of the morning outside. By the time we came in, we were ready for a cold, refreshing beverage. To kick off my challenge, I decided to make some strawberry lemonade. I pulled 2 bags of strawberries out of the freezer and set them in some hot water to thaw. I probably should only have taken 1 out because I ended up with a huge batch! In the end, I filled 2 large pitchers, nearly a gallon total! A gallon of thick, strawberry-lemon goodness. It definitely hit the spot, which is a good thing, since we will be enjoying this tasty beverage for many days to come.
2 qt. Frozen Strawberries (Thawed)
Juice from 9 Lemons
3/4 C. Sugar
9 1/2 Cups Water (May increase the amount for a more traditional lemonade)
Directions: Combine the sugar and 1 1/2 cups of water in a small saucepan. Bring to a boil, dissolving the sugar and making a syrup. Set aside to cool. Dump the thawed strawberries into the blender. Add the lemon juice and blend until smooth. Combine the blended mixture and the syrup. Add the remaining water and stir. Pour over ice and serve cold.
