Chocolate Chip Cookies


Who doesn’t love a good chocolate chip cookie? (or two or three!) I like a good cookie now and again, but my husband LOVES them! He will eat as many as I can make, and more. So, I came up with this somewhat healthier, vegan recipe.

Preheat Oven to 375 degrees.

Combine with an electric mixer:

  • 3/4 C. Brown Sugar
  • 1/3 C. Sugar
  • 1/2 C. Earth Balance
  • 1/2 C. Coconut Oil
  • 1 tsp. Vanilla
  • 1 Tbsp. Egg Replacer mixed with 1/4 C. Water

In a small bowl, combine:

  • 1/2 C. Whole Wheat Flour
  • 1 1/2 C. All Purpose Four
  • 3/4 C. Quick Oats
  • 1 tsp. Salt
  • 1 tsp. Baking Soda

Mix the wet and dry ingredients together. Add:

  • 1 C. Chopped Walnuts
  • 1/2 Bag Semi-Sweet Chocolate Chips (Of course you can use more if you’d like.)

Form into balls and place on cookie sheets. Press down slightly before putting in the oven. Bake for 14-17 minutes. Cool on a rack. Enjoy alone or with a cold glass of almond milk! (If you want to eat any tomorrow, you may need to hide them from your hubby!)
